In every delicious cookie, milkshake and cream sauce exists a delicate balance of ingredients that harmoniously unite to create a pleasant and satisfying eating experience for the consumer. When we modify the recipe to enhance a food’s nutritional profile, the balance is disrupted and the sensory qualities that make it delicious (i.e., taste, texture, mouthfeel) are often compromised. Eliminating that compromise can be extremely difficult and/or costly, forcing product developers to choose between better nutrition and better taste.
